Salty Sweet

It's Friday night and you're comfortably lounging on your couch watching attention grabbing movies when you get that sudden ache of hunger, but everything you have you're not hungry for! What is one to do? You should whip up this super easy and addicting Caramel Popcorn. I found this recipe a while ago when I cooked for my sister-in-laws Halloween Party and it was a hit. There wasn't any left and we even cleaned the bowl out! That's truly how good it is :) Well last night I was procrastinating instead of packing for my trip and got hungry for the popcorn so I thought I'd share it with you.
Easy Caramel Popcorn
  • 3 qts. popped corn (12 cups or 3 mini bags or 2 regular sized bags)
  • 1 c. firmly packed brown sugar
  • 1/2 c. Karo corn syrup
  • 1/2 c. butter
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda  
  • I threw in a cup of peanuts as well but that is optional and my variation
In the saucepan, combine butter, salt, Karo syrup, brown sugar. 
Stir constantly until it starts to boil. Let boil without stirring for 5 minutes. 
Remove from heat. Then put in baking soda, stir. Pour over popped corn and mix till popcorn is coated.
