Bean Me Up

Finally it's Friday! I couldn't be happier. This week has surely been a long one. I want to thank you all for not only reading my blog but for also giving me advice a few posts back of how to get out of my funk. I did what you said, listened to music, went for a run, relaxed and I feel back to myself. I also think now that the semester is slowly coming to a close I will be less stressed and unmotivated. Ever get so swamped down that you just shut down? Yeah, that's how I felt. Anyways, to celebrate Friday I wanted to share a fun recipe with you that came from my boss. She made this for a get together we all had once and I fell in love with it. It is so yummy and it reminds me of summer and sitting on the deck at the beach. I made it a few days ago because I was craving something good to much on with tostito chips (a weakness of mine). 
1 can each of- Butter Beans, Chick peas (Gorbonzo Beans), Black Beans, and Sweet White Corn (I couldn't find white so I used white and yellow corn).
Drain the beans and then mix together
Cilantro really gives the dip it's flavoring, so I tend to use a lot. 
I pick the leaves off and then gently chop up.
Cut up Onion, Celery, and Cilantro to taste and then mix in with beans.
½ cup white vinegar, ½ sugar, ½ veg or olive oil (I use olive oil- tastes better)
Mix together and then pour over bean mixture and mix. Chill in fridge.
It's not the prettiest dish but is so good- you'll love this! I eat it with tostito (nacho) chips. I bet lime flavored ones would be good...might have to try that this weekend. Here's the recipe:

1    can sweet white corn                                       
1    can butter beans                                       
1    can black beans
1    can chick peas
½    cup sugar
½    cup white vinegar
½   cup oil (veg  or olive oil) – I use olive oil
Chopped red onion, celery and cilantro to your taste
Drain beans and corn – mix all ingredients together and chill
