Zucchini Bread

This week's Food Friday recipe comes from my Grandma S. Every summer my father and I plant a zucchini plant and hope for a good crop and each year we are never disappointed. I don't know when or where this recipe originated from but I just remember as a kid my grandma always making this bread. She passed away many years ago and last year I stumbled upon this recipe while searching through cookbooks for a different recipe and realized it had been way to long since this bread was made. It seems that now I've started a summer thing and this year I made four loaves over the weekend. (I grew a HUGE zucchini) The bread is really moist and very yummy. I brought a loaf into work and it was gone by the end of the day! I love to heat it up a little and spread cream cheese on top.

 Pineapple- the secret ingredient!
One round of this recipe makes 2 loaves!
Zucchini Bread
2 1/3 cup sugar                               1 teaspoon nutmeg
3 eggs                                           1 1/2 teaspoon cinnamon
1 cup vegetable oil                           1 teaspoon salt
2 cups grated zucchini                      2 teaspoons baking soda
1/2 teaspoon vanilla                         1/2 teaspoon baking powder
3 cups flour                                    1 can (15 oz) of crushed pineapple (drained)

Cream the sugar, eggs, and oil.
Add zucchini and vanilla and mix.

Add all dry ingredients and mix.
Then add pineapple and mix this well blended.
Grease and flour 2 bread pans.
Bake at 350 degrees F for 50 to 60 minutes.
I hope you enjoy this recipe. It's one of my favorite since it's a family recipe. Like I said I made 4 loaves last weekend and I still have a ton of zucchini growing in the garden. I think I'm going to make fried zucchini soon! YUM! Have you ever had that?
