Besides watching all the trees leaves turn these gorgeous colors the other thing I love most about Fall are the pumpkins! Yes, the round orange things that get hollowed out and carved up for Halloween. I love the kind you can eat and I make anything and everything with them-pumpkin pie, pumpkin bars, pumpkin cookies, pumpkin cheesecake, and many other things. When I found this impossibly easy recipe the other day I was so excited to try it out. My parents, who I made the pie for were not too sure about it at first. However, after having a slice they said they loved it more than pumpkin pie! I think the whole pie was gone within 3-4 days. It really is that good-and so easy! Just through everything in a blender, pour in a greased pie plate, top with icing then pop it in the fridge. The Bisquick makes the pie very firm and creates almost a crust on the bottom. My favorite part of the pie is the topping-I could have eaten the whole bowl! (click here for recipe)

Just a warning-even if your not going to make the pie now, grab a few cans of pumpkin next time your at the store. I heard there is another shortage on pumpkin (the kind to eat) and that the cans are going fast. I went to three stores and their shelves were wiped bare! So stock up now! Last year there were almost no pumpkin pies at our Thanksgiving dinner due to the shortage. Wouldn't want this to happen to you.
Big plans for this weekend? I'm so excited for this weekend-it's going to be a full on girls weekend. My mom, sister, and two nieces. Who knows what girly things we'll get into. Probably lots of shopping, good food, a little Zoie/Tif makeup/dressup photo session, and great conversation. I haven't seen my sweetpea since August! I've definitely being going through withdrawal.
