Sour Cream Pumpkin Bars

Are you liking my weekly Food Friday posts? I know some of you are enjoying them and want to ask what you would like to see more of- desserts or meal type recipes? I have a HUGE sweet tooth and love to bake. I always wanted to go to pastry school so that's why I tend to post desserts mostly, but if you would like to see main dishes I could post some. Just let me know please!

This weeks recipe comes from my coworker. She sent it to me knowing that I love pumpkin and can't resist trying something new. I have to just say a few things about this recipe and how it might look different if you make it. (recipe HERE)
     1. I do not own a 15x10" pan so I used a 13x9" cake pan which means the  
         bars are a lot thicker than they should be. 
     2. When I make this again I would scratch the icing and use a cream 
         cheese icing instead. I'm not a huge fan of confectionery sugary 
         icing-way to sweet.
     3. I used 2 cups of regular flour since I was out of whole wheat flour.
With all of that said I did love the cake part of this recipe-it's so yummy. My mother also enjoyed as well but said that it's very rich and to take a small piece. I hope you enjoy this recipe as well!

Thankfully I have a few cans in the cabinet and grabbed a few more last time I was at the store.

Big plans this weekend? Mine-I plan on sleeping, a lot, and trying to over come this nasty cold I've come down with. I've woken up the past three mornings thinking it was Saturday and then was sad when I realized it wasn't. Has that ever happened to you? It's one of the worst feelings ever. So I just plan on taking it easy this weekend. Resting, relaxing, and maybe pulling out my winter wardrobe and packing up my summer one. It was 34 degrees the other morning. Well, whatever you do I hope you have a wonderful weekend!
