Happy Friday everyone! How was everyone's week? Mine went by too fast for once, and I managed to accomplish alot! For this week's Food Friday, I bring you a recipe that I tried a few weekends ago-Red Velvet Whoopie Pies. (Recipe HERE)I absolutely love whoopie pies...what are whoopie pies you ask-"The Whoopie pie (alternatively called a gob, black-and-white, bob, or "BFO" for Big Fat Oreo) is an American baked good that may be considered either a cookie, pie, or cake. It is made of two round mound-shaped pieces of chocolate cake, or sometimes pumpkin cake, with a sweet, creamy filling or frosting sandwiched between them."
With that said, whoopie pies are one of those desserts that make you feel like your back home surrounded by family and warm love. When I saw this recipe I was intrigued because I never heard of using Bisquick (pancake mix) to make whoopie pies. This recipe was fairly easy but different tasting. The cake part didn't have a very chocolaty sweet taste to it, but the filling was amazing! I think the next time I make these I'll add a little extra cocoa and sugar.
