Peanut Butter Cream Cheese Frosting

Seriously, thank goodness it's Friday. I swear as the summer goes on the work days feel so long and the weekends feel too short. 

This week I bring you a new recipe that my family is in love with. I made this Peanut Butter Cream Cheese Frosting over the 4th of July for the filling in the girls birthday cakes. (HERE) I had a ton left over because I only used it as the filling and was starting throw it out when my brother, niece, and nephew nearly tackled me to the ground for it. They then proceeded to clean the bowl. Last night I was making a cake to celebrate my boss' birthday and I decided to ice the whole cake with this icing since she loves peanut butter. It turned out great-and everyone loved it!

It's a very simple recipe-only 4 ingredients! The recipe does call for unsalted butter, but I didn't have any and the salted butter didn't make any difference at all. Also the original recipe calls for 2/3 cup of peanut butter but I felt it didn't taste that peanut buttery so I add 3/4 cup instead. I included the recipe below for you!

This icing recipe is so simple to make and you could use it as icing or filling on just about anything! I hope you love it as much as my whole family does!

I am so excited for this Saturday. A few years ago I used to work at a local pet store part time and I met the best group of people there. We've all gone our separate ways over the years and haven't really seen one another since then. But this Saturday a group of us are all getting together at the old owners house for a little reunion. I can not wait to see everyone and catch up with them. Oh and to also meet all the new 4-legged furry family members!

Peanut Butter Cream Cheese Frosting        Print Recipe HERE
Makes about 5 cups

10 ounces cream cheese, at room temperature
1 stick (4 ounces) unsalted butter, at room temperature
5 cups confectioners’ sugar, sifted
¾ cup smooth peanut butter, preferably a commercial brand (because oil doesn’t separate out)

1. In a large bowl with an electric mixer, beat the cream cheese and butter until light and fluffy. Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes.

2. Add the peanut butter and beat until thoroughly blended.
