With Thanksgiving officially over I'm sure you're probably pumpkin-ed out. I know I am. However, when I saw this Spicy Pumpkin Pancake recipe (HERE) the other day I knew it would be perfect for the holiday weekend with family visiting. I tested the pancakes out last weekend and I'll just say they are niece approved! Zoie even ate the leftovers everyday this week before heading to school! The recipe also comes with a maple-pecan syrup which I didn't attempt.
These Spicy Pumpkin Pancakes look yummy don't they! (Recipe HERE) You might notice that the recipe only calls for 1/3 cup canned pumpkin and you might be thinking that you don't want to open a large can for just a tiny bit. Did you know that you can store pumpkin in the fridge for 3 days or in the freezer for 3 months? I store mine in the freezer all the time and then pull it out when I have a recipe that calls for an odd amount. Hope you try these pancakes out-they are the PERFECT Saturday breakfast food.
