Ham & Egg Breakfast Cups

Happy Friday! I know it's been a few months since I’ve done a Food Friday post and I'm. I hope to get back into posting my weekly recipes for your hungry tummy's and mine! This weeks recipe comes from a photo I saw on Pinterest a few weeks ago. (Do you follow me on Pinterest? HERE) These little Ham & Egg Breakfast Cups (recipe HERE) looked so delicious that I knew I had to try them the next morning. Not only are they are super easy to make but they are so delicious that you won't be able to eat just one. I've actually been making these every weekend for the past month for my family.

Seriously how easy is this recipe? 3 ingredients, 20 minutes in the oven and you have breakfast! (recipe HERE) There are a few variations you can do with this -
     1. Make sure to buy chipped/shaved ham from the deli. You can get any type of ham. Go with your taste. I tried Maple Baked Ham and it was good but we prefer Honey Baked Ham instead..
     2. Instead of cracking the egg directly into the muffin tin, crack the egg into a measuring cup add a little ham and then stir to break the yoke. This makes it so the ham is mixed throughout the egg.
3.I love to add a little hot sauce to my eggs to give it an extra kick.
    4. I think adding some chopped broccoli or bacon to the cups would yummy as well.
I hope everyone has a wonderful weekend and a delicious breakfast!
