Food Friday: Crispy Edamame

This Crispy Edamame recipe is another wonderful Pinterest find (follow me) that just looked too good to pass up. Edamame is a great source of protein and fiber which makes is a great snack. When I saw that this Crispy Edamame recipe consisted of coating the little beans in cheese and then roasting them I knew I instantly needed to try it out. (You can find the recipe HERE)

Like with all of my recipes I have some tips that will help you get the perfect Crispy Edamame snack. 
  1. After thawing beans, spread beans out on paper towel and pat dry before mixing. If the beans are wet they will not crisp up.
  2. Put beans in a ziplock bag and add oil and dry parmesan cheese then shake to fully coat each bean.
  3. After the initial 15 minutes give the beans a stir every 10 minutes to keep them rotated. Roast 'til golden brown - the beans will shrink significantly in size and you will have to cook about 20-30 minutes.
  4. Eat beans as soon as they are cool enough for you. The beans turn soft if you store them in a container and are best ate right away. Sort of like popcorn :)
