Strawberry Upside Down

This weeks Food Friday recipe comes from one of my coworkers. She was telling me about this dessert and I just had to try it- I mean I love Upside Down Pineapple cake and I love Strawberries so I knew this was a winner. The recipe is fairly easy- the only time consuming part is washing the strawberries and then crushing them up. I used a mini food processor to crush them instead of doing it by hand.
I love recipes with not many ingredients. Means you don't have to buy much :)
The recipe doesn't say to grease the pan but I did because I was afraid it would stick. I greased then lightly floured the pan before spreading the strawberries on the bottom.
 Sprinkle with dry jello powder.
Top with marshmallows.
Pour cake mixture over and bake!
I wasn't sure if I would like this or not with the marshmallows but it's actually very good. The marshmallows melt and make the cake have a thicker texture. For the full recipe please click here. I hope you enjoy it! It's great for this 4th of July weekend. Just add some whipped cream to the side and it's perfect.

I know I've told you this many times this week, but right now as you're reading this I'm driving to the beach! Outer Banks here I come!! I just wanted you to know though that I'll still be checking email and tweeting the whole time I'm at the beach (follow me at but sadly I won't be able to visit many blogs. I'll definitely visit everyone when I get back.

I hope you all have a safe and wonderful 4th of July weekend!
