Italian Love

This weeks recipe comes from my Aunt Candy (Hi Aunt Candy!). She made this Italian Love cake a few years ago for our family reunion and I think I ate about 5 pieces. It was so yummy that I just had to have the recipe! I don't know why this cake is called Italian Love cake. Maybe it's because after you calculate all the eggs, cheese, and sugar that goes into it you might end up with "love handles", or it could be because Ricotta cheese is typically used in Italian food, what ever the case might be all I know is that I love it. I know ricotta cheese in a cake might sound gross, but trust me it's really good. The cheese mixture mixes in with the cake as it bakes and gives it this light fluffy feeling and a gorgeous swirl look.
1 box marble cake mix 

2 lbs (32 ounces) ricotta cheese  
4 eggs  
3/4 cup sugar  
1 teaspoon vanilla


-Mix ricotta cheese, eggs, sugar, and vanilla at a fast speed till thoroughly blended, then set aside. 
-Prepare cake mix as package instructs. (13x9 cake pan)  
-After cake is in the cake pan, slowly and evenly pour the cheese mixture on top.  
-Bake at 350 degrees F for 1 hour. 
-Thoroughly cool the cake.

16 ounces cool whip
3.4 ounce chocolate pudding

Mix together cool whip and a box of chocolate pudding and then spread immediately over top of cake. Refrigerate for 1 day.
